15 Minute Steakhouse Side

Spinach and Sweet Onion Mashers
paired with a perfect steak and creamy sauce

I realized that I don’t share enough of my side dish recipes with you all.  This week, that is changing.  Here is a so simple and delicious side to go with your next steakhouse meal. 

Instant potatoes?  Let me tell you, these aren’t the same dried potatoes we had when I was growing up.  I grew up in the country—up north.  In the winter, we didn’t know when mom would be able to make the 30-minute trek to the supermarket.  So she stocked up on instant potatoes. 

You will love this dish so much, you will make it over and over again.

Spinach and Sweet Onion Mashers

¼ cup thinly sliced Onion
1 Teaspoon Olive Oil
2 Teaspoons Honey
1 package Instant Butter Flavored Mashed Potatoes
1 2/3 cup Hot Water
2 Tablespoons Butter
2/3 cup Buttermilk
3 ounces fresh Spinach, cleaned, washed and stemmed
¼ Teaspoon Freshly Ground Nutmeg
1/8 cup Fresh Grated Romano Cheese

Sauté onion in olive oil over low heat, about seven minutes, until onions begin to lightly crisp.
Add honey.  Cook over low heat for two more minutes.

Add hot water, butter and buttermilk to instant mashed potato mix.  Stir.  Cover tightly with plastic wrap and microwave on high for five minutes.



While potatoes are cooking, add spinach to pan.  Turn once and turn off heat.

Grate fresh Nutmeg over spinach.



When potatoes are cooked, fluff with fork.  Add to pan with spinach and onions.  Combine.



Add freshly grated Romano Cheese. 

Stir well and serve.

Spinach and onion is a great addition to mashed potatoes, not to mention all of those other tasty add ins. Glad you posted this one!

Oh yum! I am definitely trying this next time with my steak. The spinach and onion sound like supper delicious additions. Actually everything you've added sounds awesome.
