Chili Lime Cornish Hen |
Ingredients:
¼ Cup Olive Oil
2 Tablespoons Chili Powder
4 tablespoons Lime Juice, divided
Sea Salt, to taste2 Cornish Hens, cleaned
Freshly Chopped Culantro or Cilantro
Mix olive oil, chili powder and ½ the lime juice, and salt into a bowl. Toss Cornish hens into mixture. Refrigerate for 30 minutes.
Bake Cornish hen on a rack for one hour, basting with remaining lime juice repeatedly during the last 20 minutes.
Top with Fresh Culantro.

I've done something similar to chicken but I never would have thought to use those flavors on cornish hens... great idea!
